These six versions are fresh drinks made in small batches and kept refrigerated. They are not commercially shelf-life-tested formulas and do not need months of ageing.

Before you begin

Use only commercially bottled drinking vodka at 40% ABV. Never use cleaning alcohol, fuel, medical alcohol or alcohol of unknown origin.

Do not heat the vodka, flambé or distil it. Make the syrup separately and let it cool before adding the spirit.

Wash hands, utensils and containers. Use clean food-safe bottles with lids; domestic cleaning does not make their contents shelf-stable.

Keep every version at 0–5°C and use within 48 hours of starting preparation, or sooner if an ingredient requires it. Bottling does not restart the clock.

Serve small measures of approximately 20–30ml, only to adults who can consume alcohol. Final alcohol strength depends on yield: do not label the mixture as retaining the vodka’s 40% ABV.

1. Berry liqueur

Ingredients: 150g prepared berries, 80g sugar, 50ml water, 5ml lemon juice and 200ml vodka. Approximate yield: 350–450ml, depending on how much juice is extracted.

Put berries, sugar, water and lemon in a saucepan. Simmer for 5 minutes, stirring and crushing the fruit. For frozen berries, also follow the packet’s cooking instructions.

Pass through a fine sieve, pressing with a clean spoon. Cool the liquid promptly in a shallow container.

Once cold, mix in the vodka and transfer to a bottle. Refrigerate immediately and shake before serving.

2. Passion fruit liqueur

Ingredients: 100g seedless passion fruit pulp, 70g sugar, 50ml water and 200ml vodka. Approximate yield: 350–400ml.

Bring the pulp, sugar and water to a gentle simmer, stir for 2 minutes and remove from the heat. Cool promptly, add the vodka once cold and bottle. Keep refrigerated. For a ginger variation, simmer 5g sliced ginger in the syrup and remove it before cooling; do not add raw pieces to the bottle.

3. Chocolate and coffee liqueur

Ingredients: 10g unsweetened cocoa powder, 3g instant coffee, 70g sugar, 100ml water, 200ml vodka and 2.5ml vanilla extract. Approximate yield: 350ml.

Mix cocoa, coffee and sugar in a saucepan. Gradually whisk in the water to avoid lumps. Simmer for 3 minutes while stirring and cool promptly. Add vodka and vanilla only once cold. Refrigerate and shake before serving: cocoa can settle. A chocolate bar is not a direct substitute for the cocoa in this recipe.

4. Orange and vanilla liqueur

Ingredients: approximately 10g thinly pared coloured peel from 1 washed orange, 70g sugar, 100ml water, 2.5ml vanilla extract and 200ml vodka. Approximate yield: 350ml. Avoid the bitter white pith.

Simmer the peel, sugar and water for 3 minutes. Remove from the heat and steep for 15–20 minutes. Strain, discard the peel and cool promptly. Add the vanilla and vodka to the cold syrup, bottle and refrigerate. This is a short infusion; do not leave the drink at room temperature for weeks.

5. Creamy condensed milk liqueur

Ingredients: 150g sweetened condensed milk, 100ml UHT whole milk, 150ml vodka and 2.5ml vanilla extract. Approximate yield: 350–400ml. Contains milk.

Use chilled ingredients. Whisk the milk and condensed milk until smooth, then gradually whisk in the vodka and vanilla. Bottle and keep refrigerated. Shake gently before serving. Alcohol does not remove the need for refrigeration, and opened UHT milk no longer has the storage conditions of its unopened carton. Replacing only the milk with coconut milk does not make this vegan: the condensed milk is dairy too.

6. Almond flavour, inspired by amaretto

Ingredients: 70g sugar, 100ml water, 200ml vodka and commercially produced food-grade almond extract at the manufacturer’s dose for approximately 350ml of drink. Concentrations vary considerably: measure according to the label rather than using one universal spoonful.

Dissolve the sugar in the water over a low heat and simmer for 1 minute. Cool promptly and add the vodka and measured extract. Bottle and refrigerate. This is an almond-flavoured drink, not a reproduction of a commercial brand. Check the extract’s allergen information.

Do not use crushed apricot kernels or raw bitter almonds. They can release cyanide; the UK guidance on hydrogen cyanide describes the risk. Soaking them in alcohol is not a safe domestic solution.

Serving, gifts and storage

Label the flavour, ingredients, alcohol content warning, allergens, preparation date and time, and instructions to refrigerate and consume within 48 hours. For a gift, deliver chilled and explain this limit; do not send by ordinary unrefrigerated delivery. Do not promise months of shelf life, digestive benefits or medicinal properties.

These recipes are for prompt domestic use. Selling drinks requires a separate assessment of local rules, composition, labelling and shelf life; an attractive bottle or a measure of vodka does not replace that assessment. Measure the actual yield before portioning and do not top up old bottles with a fresh mixture.

AI-generated illustration; yield and appearance vary with the
